In this wine producer wanted to highlight its strongly pronounced fruity style with beautifully expressed apricot, white peach and melon amidst citrus notes. These tastes are completed with creamy texture, creme brulee and delicate oakiness.
For 2019 Chardonnay, was limited the yield per hectare down to 6 tons. This ensured exceptional ripening of the grapes, even and free from any losses of the desired style of future wine.
Selective manual harvesting of grapes into 15 kg crates and its further cooling down to 0 - +3 degrees eliminated the risk of spontaneous and uncontrollable processes and to a certain extent it also concentrated aromatic precursors in future wine.
Fermentation was conducted in stainless steel containers in contact with quality oak staff. For our 15% Chardonnay 2019 we performed malolactic fermentation for more complex and structured taste. This was followed by 5-month ageing of the whole batch on fine lees (sur lie).
